Recipe: Crunchy Peanut Butter Thins

THESE PEANUT BUTTER THINS TASTE LIKE A PEANUT BUTTER COOKIE WITH A CRUNCHY KICK.

WHAT YOU NEED

  • Peanut butter, (1/3 cup)
  • All purpose flour, (1/2 cup)
  • Brown sugar, (1/3 cup)
  • Wheat flour, (1/2 cup)
  • Chia Seeds, (2 tbsp)
  • Rolled oats, (1/4 cup)
  • Kosher salt, (1/2 tbsp)
  • Vegetable oil, (3 tbsp)
  • Chocolate, ( 2, squares)
  • Wheat germ, (1 tbsp)
  • Egg whites, (1, large)
  • Ground cinnamon, (1/4 teaspoon)

WHAT YOU NEED TO DO

  • Preheat you oven to 180°C (350° F). Line a baking tray with parchment paper and spray lightly with nonstick baking spray.
  • Mix the rolled oats, all-purpose flour and wheat flour, wheat germ, cinnamon, chia seeds and salt in a bowl. Set aside. Mix the egg white, brown sugar, peanut butter and vegetable oil in a separate medium bowl. With a mixture, beat until creamy, for about 2 minutes. combine the dry blend on low speed until a sandy and wet mixture forms.
  • Place the dough into the baking tray and press into a flattened layer. Bake for 25-30 minutes, until golden. Let cool thoroughly.
  • Drizzle with the melted chocolate. After the chocolate hardens, break into eighteen even pieces.

Prep time: 10 minutes

Cooking time: 30 minutes

Serving : 18 pieces
