Recipe: No-Bake Dark Chocolate Cheesecake Bars

THIS SOFT AND FUDGY BARS THAT HAVE THE SLIGHT TANGINESS OF A CHEESECAKE, ARE A PERFECT DESSERT EVEN IF YOU FOLLOW A DIET.

WHAT YOU NEED

  • Cocoa powder, (1/4 cup)
  • Coconut flour, (1/4 cup)
  • Cracker crumbs, (1 cup)
  • Cream cheese, (8 tbsp)
  • Honey, (2 tbsp)
  • Vanilla extract, (1 teaspoon)
  • Coconut oil, (1 teaspoon)
  • Chocolate chips, (1/3 cup)
  • Almond milk, (2-3 tbsp)

WHAT YOU NEED TO DO

  • With a non stick cooking spray, grease a 23 x 10-cm (9 x 4 – inch) loaf pan very well.
  • Process the cocoa powder, graham crackers, and coconut flour until well combined. Add vanilla extract, cream cheese, and honey, then continue to process until it begins to make a dough. Add a little bit of almond milk if the consistency is too crumbly for you, but make sure that it’s not wet and sticky.
  • Place the dough to the prepared loaf pan. Next, use a spatula to spread it into square. Flatten it evenly.
  • Melt the coconut oil and sugar free chocolate chips bain-marie ( double boiler ) style.
  • Pour the melted chocolate over the bars and spread evenly. Top with the optional toppings. Let the bars set for min. 1 hour in a refrigerator.
  • When the bars have set, allow them to thaw, and cut into individual squares.

Prep time: 15 minutes

Cooking time: 1 hour

Serving : 12 bars
