Recipe: Peanut Butter Mousse

IT’S HARD TO GUESS THIS PROTEIN-PACKED MOUSSE’S SECRET INGREDIENT.

WHAT YOU NEED

  • Silken tofu, (12.3oz – 350)
  • Confectioners’ sugar, (1/3 cup)
  • Creamy peanut butter, (1/3 cup)
  • Vanilla extract, (1/2 teaspoon)

WHAT YOU NEED TO DO

  • Process the silken tofu, confectioners’ sugar, pure vanilla extract and reduced-fat peanut butter in a processor until smooth.
  • Separate into glasses, cover with a plastic wrap and place in the refrigerator for minimum 30 minutes, until set.

Prep time: 5 minutes

Chilling time: 30 minutes
