Recipe: Peanut Butter Oat Energy Balls

THESE DESSERT-LIKE ENERGY BALLS ARE A PERFECT PRE-WORKOUT SNACK.

WHAT YOU NEED

  • Maple syrup, (2 tbsp)
  • Rolled oats, (3/4 cup)
  • Flaxseed meal, (1/4 cup)
  • Chocolate chips, (1/2 cups)
  • Peanut butter, (3/4 cups)
  • Medjool dates, (10, pitted)
  • Chia seed, (1/3 cup)

WHAT YOU NEED TO DO

  • Soften the dates by pouring hot water over them and wait for 10 minutes.
  • First, process the softened dates, then add the pure maple syrup, oats, peanut butter, sugar-free chocolate chips, flaxseed meal and chia seeds. Pulse 3-4 times until just combined. Pay attention to not over blend.
  • Form smooth balls by rolling them in between your palms.

Prep time: 10 minutes

Serving : 20 bites
