Recipe: Quinoa Peanut Butter Brittle

THIS CRUNCHY SWEET TREAT USES QUINOA IN AN UNEXPECTED BUT TASTY WAY.

WHAT YOU NEED

  • Chia seeds, (2 tbsp)
  • Raw peanuts, (3/4 cup, chopped)
  • Quinoa, (1/2 cup)
  • Coconut sugar, (2 tbsp)
  • Maple syrup, (2/3 cups)
  • Vanilla extract, (1/2 teaspoon)
  • Rolled oats, (1/3 cup)
  • Coconut oil, (2 tbsp)
  • Sea salt, (1/8 teaspoon)

WHAT YOU NEED TO DO

  • Preheat your oven to 160°C (320°F). Line a rimmed baking tray wite parchment paper.
  • Stir the chopped raw peanuts, uncooked quinoa, coconut sugar, rolled oats, salt, and chia seeds together in a bowl. Add the pure maple syrup and vanilla extract, and melted coconut oil. Then stir until everything mixed.
  • Flatten the mixture into your prepared baking tray. Bake until the color is golden brown, for 15 minutes.
  • Bake into bite-sized pieces after letting it cool completely.

Prep time: 10 minutes

Cooking time: 15 minutes
